Pesach Gluten Free Almond Chocolate Chip Cookies

  • 3 Cups of Blanched Almond Flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/4 cup coconut oil
  • 1/4 cup of date syrup
  • 1 whole egg
  • 2 Eggs Whites
  • 1 Tsp Vanilla Extract
  • 1 cup of dark chocolate chips
  • 1/2 cup toasted sliced almonds

LOL, if you want passover vanilla, plan a year ahead.  Buy some 209 passover gin and put vanilla beans and alcohol away for a year.

set the oven to bake 375 and in 3-4 minutes toast the sliced almonds.

Line two baking sheets with parchment paper.

combine almond flour salt and baking soda and set aside

Mix coconut oil and date syrup in a mixer until almost combined about 5 minutes.

Add whole egg. egg whites and vanilla and mix for 2 more minutes

Slowly add dry mix and mix for 1 more minute

Add chocolate chips and almonds until fully incorporated.

Place large rounded tablespoons of dough onto parchment

Bake 12-15 minutes, the cookies will look dark.  15 minutes burnt the bottoms when I did it, but 12 was too little.
