Aloo Ghobi
This recipe need good fresh cauliflower to be best
Ingredients:
- 1 head of califlower, chopped into 1 inch pieces
- 4 large potatoes, cubed into 3/4 inch slices
- 1 tablespoon of cumin seeds
- 1 onion diced
- 1 large green chile
- 2 tablespoons minced ginger
- 1 15oz can diced tomatoes
- 3 - 4 cloves of garlic
- 1+ teaspoon of tumeric
- 1+ Garam Marsala
- 1/2 cup water
- 1/2 cup chopped cilantro, stems added to onion, leaves set aside
Directions:
- In a Wok, add 3-4 tablespoons of oil. Heat. Add cumin seeds, a minute later add onions, cilantro stems, garlic and ginger.
- Cook until onion becomes translucent.
- Add Tumeric and cook for a minute more.
- Add Tomato including all liquid and cook a minute more.
- Add Califlower and potatoes and mix everything together.
- Reduce heat to medium and cook for 20 minutes until potatoes become soft, stirring every few minutes.
- When Potato becomes soft add Garam marsala and cilantro leaves and mix.
- When ready to eat, shut off and let sit for 5 minutes.
