Aloo Ghobi

This recipe need good fresh cauliflower to be best

Ingredients:

  • 1 head of califlower, chopped into 1 inch pieces
  • 4 large potatoes, cubed into 3/4 inch slices
  • 1 tablespoon of cumin seeds
  • 1 onion diced
  • 1 large green chile
  • 2 tablespoons minced ginger
  • 1 15oz can diced tomatoes
  • 3 - 4 cloves of garlic
  • 1+ teaspoon of tumeric
  • 1+ Garam Marsala
  • 1/2 cup water
  • 1/2 cup chopped cilantro, stems added to onion, leaves set aside

Directions:

  1. In a Wok, add 3-4 tablespoons of oil. Heat. Add cumin seeds, a minute later add onions, cilantro stems, garlic and ginger.
  2. Cook until onion becomes translucent.
  3. Add Tumeric and cook for a minute more.
  4. Add Tomato including all liquid and cook a minute more.
  5. Add Califlower and potatoes and mix everything together.
  6. Reduce heat to medium and cook for 20 minutes until potatoes become soft, stirring every few minutes.
  7. When Potato becomes soft add Garam marsala and cilantro leaves and mix.
  8. When ready to eat, shut off and let sit for 5 minutes.
