Applesauce

Gluten free, and only the natural sweetness of the fruit. Simplest applesauce ever.

3 apples, cored and cut up a little
1 Tbsp lemon juice
1 tsp ground cinnamon

Place all ingredients in food processor or Vitamix.
Process for 2-3 minutes, or until the consistency you want.
Transfer to a small saucepan and simmer on low for about 30 minutes or until it tastes good, stirring occasionally. Leave the cover off if it’s too liquidy and you want it to get thicker.

Yield: about 1 pint
