Banana Oat Muffins or Bread
Ingredients:
2 cups Bob's Red Mill Gluten Free Oat Flour
1/2 cup Bob Red Mill Gluten Free Oats
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 cup mashed bananas (about 3 small bananas)
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup of milk (or Oat Milk)
1/3 cup Oil
2 Eggs
1 tsp Vanilla
Optional: 1/2 cup chopped walnuts and/or 1/2 cup chocolate chips. I haven't tried this but it sounds like it would be good.
Directions:
For muffins: Preheat oven to 400 degrees. Line a 12-cup muffin tin with paper liners.
For bread: Preheat oven to 350 degrees. Grease a loaf pan.
In a medium bowl combine oat flour, oats, baking powder, baking soda and salt.
In a separate bowl, combine banana, sugars, milk, oil, eggs and vanilla, mixing thoroughly.
Stir flour mixture into banana mixture until well combined. Scoop batter into muffin tin, filling cups 3/4 full, or into loaf pan.
Muffins: Bake the muffins until a toothpick inserted in the center comes out clean, 18-20 minutes. Allow muffins to cool slightly, about 2-3 minutes, then remove from pan and finish cooling.
Bread: Bake the loaf until a toothpick inserted in the center comes out clean. I forgot to write down how long I baked it but maybe 45 minutes?
