Roasted Pumpkin Seeds

This is the easiest, quickest, simplest pumpkin seed recipe I’ve ever found. I think it was inspired by a recipe I found on allrecipes.com.

Ingredients

  • 1 cup raw whole pumpkin seeds, separated from pulp, but not rinsed
  • 2 teaspoons canola or other oil
  • ¾ tsp salt

Directions

  1. Preheat oven to 300 °F.
  2. Toss seeds in a bowl with the oil and salt. Spread the seeds in a single layer on a baking sheet and bake for 45 minutes or more, stirring every 15 minutes.
Recipe updated slightly 12/11 – added a little more salt and clarified cooking time.
