Wally's Meringues
Gluten-Free
Ingredients:
- 2 Tbsp cocoa powder
- 1 c sugar
- 3 egg whites
- ¼ tsp (or a little less) cream of tartar
- 1 c (6 oz) semi-sweet chocolate chips
- 1/2 tsp vanilla
Instructions:
- Preheat oven to 275 °F.
- Cover cookie sheet with aluminum foil and then spray it.
- Get all ingredients measured and ready.
- Place egg whites in mixing bowl and mix, mix, mix! (Beat, beat, beat)
- When egg whites are bubbly, begin adding sugar very, very slowly.
- Keep beating a while more.
- Test by turning bowl over and see if the beater will stay.
- Add cream of tartar and keep beating until you can hold the bowl upside down over your head without anything moving.
- Stir in chocolate chips, cocoa powder and vanilla extract. But just stir the cocoa powder in part way, so it keeps a swirl.
- Spoon onto cookie sheet and bake 35 minutes.
