Gluten-Free

Ingredients:

  • 2 Tbsp cocoa powder
  • 1 c sugar
  • 3 egg whites
  • ¼ tsp (or a little less) cream of tartar
  • 1 c (6 oz) semi-sweet chocolate chips
  • 1/2 tsp vanilla

Instructions:

  1. Preheat oven to 275 °F.
  2. Cover cookie sheet with aluminum foil and then spray it.
  3. Get all ingredients measured and ready.
  4. Place egg whites in mixing bowl and mix, mix, mix! (Beat, beat, beat)
  5. When egg whites are bubbly, begin adding sugar very, very slowly.
  6. Keep beating a while more.
  7. Test by turning bowl over and see if the beater will stay.
  8. Add cream of tartar and keep beating until you can hold the bowl upside down over your head without anything moving.
  9. Stir in chocolate chips, cocoa powder and vanilla extract. But just stir the cocoa powder in part way, so it keeps a swirl.
  10. Spoon onto cookie sheet and bake 35 minutes.
